This recipe is submitted by Mrs. Steele from Empire Masonry Heaters.  Katy is one of the best cooks I have ever met and I hope one day she writes her own cook book.  

This recipe will produce a moist, mouth watering turkey.  Even a novice cook can achieve this tasty meal.  
You will need the following items:
  • Turkey 23 - 28 lbs
  • Pan to hold turkey
  • 2 tsp black pepper
  • 2 tsp sea salt
  • 2 tsp garlic powder
  • 1/2 stick butter
  • 2 quarts water
Step 1) Preheat your masonry oven to 700 - 800 degrees Fahrenheit.  If you have a masonry heater, you can decide to get your built in oven that hot or build a separate fire inside the oven itself.

Step 2) Rinse the Turkey and place in roasting pan with vegetables and spices mentioned above.   Add 1" - 2" of water in the bottom of the pan.  

Step 3) Cover the turkey in foil and place in the oven. Close the oven with door.

Step 4) Cook your Turkey for 1 - 2 hours depending on the size of your bird.  I normally check ours at 1.5 hours with an internal thermometer reading of 140 degrees in the breast. Then I leave the turkey out of the oven and let it rest for 20-30 minutes before carving.
