Asthetically, the veneer matches your heater with your home decor, making it fit into your home like a piece of furniture. Benches, shelves, and cast iron decorations can all be added in order to dress up your heater and make it fit into your home and life.
Practically, the veneer adds more mass to the heater, allowing the heater to store more heat and release it slowly over a number of hours. Different types of veneer have different heating characteristics, but generally, the thinner and lighter the veneer, the faster the heater surface will heat up and cool.
Traditionally, each veneer was created specifically for a given heater application in a given home and installed in a more or less one-off manner.
